Given our fondness for brewing a breadth of beer styles, we couldn't create an anniversary series without including a lager. And who better to collaborate with than our friends at Chuckanut Brewery in the Skagit Valley? Not only have Will and Mari Kemper released an impressive number of award-winning lagers at Chuckanut, they also co-founded Thomas Kemper Brewing, one of the first craft breweries in the Pacific Northwest. We collaborated with them on a Pale Ale back in 2018 when they invited us to Beer Prom, and we had a lot of fun teaming up for another brew day!

When we put our heads together to develop a recipe, we landed on a New Zealand-style Pilsner hopped with Nelson Sauvin and Nectaron, two southern hemisphere varieties known for their intense aromas of wine grapes and tropical fruit. A bit of flaked rice in the mash lightened up the body, ultimately producing a beer that's bright, biscuity, and well suited for summer. As for the name? Well, during our brainstorming session Adam informed us that there were six sheep for every person in New Zealand so we started calling it 6:1. And it stuck. So here's to friendship, Pilsner, and Kiwi hops!

The final installment of our Single Hop Series is made exclusively with the ever-popular, and often polarizing, Mosaic hops. When used with other hops, Mosaic can be moderately overpowering. Given an opportunity to stand on its own, the hop's nuance is allowed to take center stage. Mosaic Oasis has big flavors of mango, fresh blueberries, canned peaches, and a slight hint of sweet onion. Mosaic hops have a wide range of flavor expressions, and much like the name, nobody will have the same experience with it. No matter what flavors you pick out of this beer, we hope that you enjoy it and are as excited by it as we are!

What started as a one-off project with the Bellingham Sister City Association (BSCA) has grown into sometime we look forward to every spring. Tateyama, named after our sister city in Japan, is a rice lager brewed with organic California kokuho rose rice from Koda Farms. Their rice provides a delicate, clean, and soft graininess that sweeps the hop flavors across the tongue. With flavors of jasmine, honeydew, and honeysuckle, this beer just screams spring. As we enter into the longer days and begin spending more time outdoors, we're happy to have Tateyama in our pack or in the fridge.

When we add juicy, heirloom peaches to our year-old Lambic-inspired ale, magic happens— they unite, gushing with bright acidity, nutty undertones and a tangy finish. It does take eight more months of aging, but it’s well worth the wait.

Bayern - 35th Anniversary Pilsner

Bayern Brewing made its debut in 1987 as, then and now, the only German Brewery in the Rocky Mountains and one of the pioneer microbreweries in the country. In 1988, Bayern produced the only fresh German Pilsener that could be found this side of the Atlantic Ocean. It was a light colored beer with 5% ABV and poured with a beautiful creamy head. For our 35th anniversary, we created a new beer that resembles everything that took us to where we are today – a Traditional Pilsener Lager. Reformulated for this anniversary, “Celebration Pilsener” is brewed with hand selected Pilsener malt, Northern Brewer hops for a noble bitterness and a late addition of Tettnanger and Spalter hops in the brewing process.
